How to make French baguettes at home


  • 700 g strong white bread flour
  • ½ tsp instant yeast
  • 1 ½ tsp kosha salt
  • 520 g cool tab water


  1. Get flour into a large bowl then add yeast and whisk into the flour.
  2. Next, add salt and mix that into the flour but if you are using table salt than add just a tsp.
  3. And the last ingredient adds water and gives them a good mix.
  4. This is the probably the most difficult part of the whole recipe I just use the handle of the wooden spoon to mix the dough, whatever you like to mix the dough but don’t use the whisk.
  5. Use a spatula to clean the wall of the bowl and then mix the dough again it will take 5 minutes then clean the wooden spoon.
  6. Cover the dough with cling film and let the dough rest to rise for 45 minutes. This is the first of four 45 minutes.
  7. After 45 minutes take the dough out of the bowl and give it a quick fold for a few seconds.
  8. The dough right now is in the sticky stage, don’t use extra flour, make sure your hands are wet hands stops the dough to stick.
  9. The dough should start to look much smoother at this point.
  10. Return the dough to the bowl for the 2nd of the four 45 minutes rest period.
  11. Repeat the previous procedure. And complete your four 45 minutes.
  12. Now this dough is looking smooth and full-bodied, these 45 minute periods add a lot of flavour to the bread.
  13. Flour the work area and turn out the dough and dust the flout onto the dough and divide the dough into 4 equal parts.
  14. The first stage is to pre-shape the baguettes, pop if there is an air bubble.
  15. Cover with lightly oiled plastic wrap and let the rise or 15 minutes.

  20. Once you 4 baguettes are formed and place on the couch cover them with a tea towel and let them rest for 20 minutes.
  21. After 20 minutes set the time for 12 minutes to preheat your oven, set your oven to 200 degrees Celsius.
  22. Place a pan of boiling water in the bottom to create a steamy atmosphere.
  23. Transfer the baguettes to the baking tray. And give them a spray of water before scoring, it is important to score the baguettes properly, your baguettes will rise evenly.
  24. Cook for 8 minutes then turn the tray round for evenly cooking.
  25. Cook for another 7 to 8 minutes or until the baguettes turn brown evenly.
