Omurice Recipe

Here we go! I have another unique egg recipe for you guys. As you all know there are various types of omelette. As an egg lover, my day starts with an omelette and sometimes ends with an omelette. So today’s recipe is exploding omelette (omurice) with chicken fried rice top with demi glace sauce. You gonna love it.

Demi Glace sauce is a brown sauce mostly use in French cuisine. We can use this sauce alone or with other sauce in various dishes.

For demi glace sauce you have to roast bones and simmer the liquid for many hours. That means you have 1 gallon of brown stock, one gallon of Espagnole and after cooking it u have one gallon of demi glace sauce.

So today we are going to make exploding omelette with chicken fried rice. This is a Japanese dish. You can eat this any time of a day like breakfast, lunch or for dinner.


For rice

  • 1 tbsp olive oil
  • 1 chicken breast
  • 4 tbsp chopped onions
  • Salt and pepper to taste
  • 2 tbsp soy sauce
  • ¾ cup boiled rice
  • 2 tbsp demi glace sauce

For omelette

  • 3 eggs
  • 1 tsp oil
  • Salt and pepper to taste


  1. First, in a skillet add oil and onion, cook it until transparent, then add chicken and let the chicken cook, season with salt and pepper and soy sauce.
  2. Now add boiled rice and toss them. Transfer to a plate and make an oval shape of rice.
  3. For eggs: whisk the eggs until it smooth.
  4. In a pan over low heat add oil. Pour eggs and immediately stir and scrambled with chopsticks. Cook the egg for about 50 seconds then rolled the omelette, like you can see in the video.
  5. Now immediately serve omelette over fried rice and cut it open with a thin sharp knife, an omelette is unfolding with soft scrambled egg and will flow on rice, top with demi glace sauce and enjoy…!
